Sugar (granulated)
Flour (all-purpose)
Butter (unsalted)

Step 1

Bring the butter to room temperature. Preheat the oven to 350°F. In a mixing bowl, combine all of the flour, 1/2 cup of softened butter, 1/2 cup of sugar & a pinch of salt. Mix it together with your hands until it forms a crumbly texture.

Step 2

Transfer the dough to a greased pie or tart pan. Press it down evenly in the pan to form a crust. (Using the bottom of a drinking glass is handy for pressing!) Trim the edges.

Step 3

Bake the crust for 15 min at 350°F, or until golden brown. Remove from the oven. Set aside to cool.

Squeeze the lemon juice into a bowl.

Step 5

Crack the eggs into a small pot. Add the lemon juice, the zest of 1 lemon & the remaining sugar. Whisk it all together.

Place the pot over low heat. Whisk constantly for 10-15 min, or until the mixture becomes smooth & thick.

Butter (unsalted)

Step 7

Remove from heat. Whisk in the remaining butter until smooth.

Step 8

Pour the filling into the crust.

Step 9

Refrigerate for 3-4 hours, or until the lemon filling sets. Serve & enjoy!
