Cut the butter into cubes (make sure the butter is cold). In a large bowl, add the flour, a pinch of salt & the cubed butter. Using your fingers, pinch the butter into the flour. Continue this until the butter pieces are the size of peas.
Pour the water into the flour mixture & mix quickly with your hands until you obtain a smooth ball of dough. Make sure to knead as little as possible so that the dough is not too tough.
To cook, preheat the oven to 350°F. Flour a clean work surface & roll out the dough using a floured rolling pin. To easily remove it from the work surface, wrap it around the roller. Then place the dough into a pie dish.
Prick the bottom with a fork & add your desired filling. Bake for the time indicated on the recipe, until it is lightly golden. If desired, brush a light egg wash (egg & water) to the dough to create a shiny crust. Remove from the oven & serve. Enjoy!
If the dough is too sticky add a little flour, if it is too dry add a little water!
