Étape 1
Remove the skin & carve the rotisserie chicken. Shred the desired amount with 2 forks.
Étape 2
Heat a drizzle of olive oil in a frying pan over medium heat. Add the spinach with a pinch of salt & pepper. Stir & cook until wilted, 3-4 min.
Étape 3
Add the cream cheese & cheddar to the spinach & stir until melted. Add the chicken & stir to combine. Season with another pinch of salt & pepper, then turn off the heat.

Microwave the flour tortillas until warm, about 30 sec.
Étape 5
One at a time, spread the cheesy chicken & spinach over a tortilla, then roll it up tightly.
Étape 6
In a clean frying pan, heat a drizzle of olive oil over medium heat. Add the roll-ups, seam-side down, & cook for 1-2 min per side, until golden.
Étape 7
Slice into 1-inch pinwheels or leave whole. Serve with ranch dressing (optional) for dipping & enjoy!
