Step 1
Separate the egg whites from the yolks.
Step 2
Place the egg yolks in a mixing bowl & add half the sugar. Mix with a hand mixer until it turns light & fluffy.
Step 3
Mix in the the mascarpone & orange zest. Mix until smooth.
Step 4
Add the whites to a separate mixing bowl bowl with a pinch of salt. Beat the egg whites until stiff peaks form. Add the other half of the sugar & whisk again.
Step 5
In several batches, fold the egg white mixture into the mascarpone preparation.
Step 6
Trim the ends off of the oranges. Then cut the peel all around. Slice the orange pieces into 1/4 inch thick slices.
Step 7
Prepare the coffee (1 cup for 8 portions) & pour it into a shallow bowl. Allow the coffee to cool slightly. Dunk the ladyfingers into the coffee & flip them once.
Step 8
Place a layer of ladyfingers into the bottom of a baking dish with high sides. (a 9x13 inch pan works great here). You can also serve your tiramisu in individual ramekins or bowls.
Step 9
Spread a layer of mascarpone cream over the ladyfingers. Then add half of the orange slices. Cover with a second layer of cookies & mascarpone. Finish with the orange slices on top.
Step 10
Cover the tiramisu & refrigerate for at least 4 hrs or ideally overnight. This recipe tastes best the day after you make it!
Step 11
Take out the tiramisu just before serving & garnish it with orange zest. Enjoy!
