Step 1
Separate the egg yolk from the egg white. Discard the yolk or use it for another recipe !
Step 2
In the bowl of a stand mixer, add the egg white & beat it on medium until the egg white is foamy & frothy.
Step 3
Turn the speed of the mixer down to low. Add a squeeze of lemon (about 1 tsp per batch). Then, slowly beat in the powdered sugar & vanilla extract. Once the sugar is incorporated, turn the mixer up to high & beat until the icing is stiff & shiny. For a looser icing, add a few drops of water until the desired consistency is reached.
Step 4
Stir in a few drops of food coloring to the icing if desired! Add the icing to a piping bag & it's ready to use!
Store this icing in the fridge for up to a week or freezer for up to a month!
