Zucchini

Step 1

Preheat the oven to 350°F. Wash & cut the zucchini into large cubes.

Flour (all-purpose)
Parmesan (grated)
Butter (unsalted)

Step 2

Dice the butter. Add the flour, cold butter, half the parmesan, salt & pepper to a bowl. Using your hands, mix to combine until you have a crumbly consistency that holds together when pinched.

Pesto

Step 3

Grease a baking dish. Add the zucchini, pesto, salt & pepper. Stir to combine.

Fresh goat cheese

Step 4

Arrange dabs of goat cheese over top, followed by the crumble mixture. Top with remaining parmesan. Bake for 40 minutes, until the crumble is nice & golden.

Step 5

Serve & enjoy!
