- Step 1
Wash the zucchini. Slice it into long ribbons with a vegetable peeler, avoiding the seeds. - Step 2
Toast the bread & spread cream cheese onto each slice. - Step 3
Add crushed avocado on half the bread slices. Season with salt & pepper. - Step 4
Layer on the sun-dried tomatoes, arugula & zucchini ribbons. Add salt, pepper & a drizzle of olive oil. - Step 5
Close each sandwich. Slice & enjoy!
