Zucchini and pea curry

Ingredients

Zucchini

Step 1

Cut the zucchini in half lengthwise and slice into half moons.

Garlic
Curry (powder)

Step 2

Heat a drizzle of olive oil in a frying pan over high heat. Add the zucchini, curry and garlic. Cook for 3 minutes, stirring occasionally.

Step 3

Optional: add herbs de Provence or thyme.

peas (frozen)
Coconut milk

Step 4

Add the peas and coconut milk. Season with salt & pepper and cook on medium heat for 5 minutes.

Rice noodles

Step 5

In the meantime, cook the rice noodles according to the instructions on the package and drain.

Step 6

Une fois les nouilles de riz cuites, égouttez-les.

Step 7

Add the noodles to the pan with the vegetables and season according to your taste. Enjoy!
