Cut the zucchini in half lengthwise and slice into half moons.
Heat a drizzle of olive oil in a frying pan over high heat. Add the zucchini, curry and garlic. Cook for 3 minutes, stirring occasionally.
Optional: add herbs de Provence or thyme.
Add the peas and coconut milk. Season with salt & pepper and cook on medium heat for 5 minutes.
In the meantime, cook the rice noodles according to the instructions on the package and drain.
