Cook the noodles according to the instructions on the package.

Thinly slice the mushrooms.
- Step 3
Heat a large skillet or frying pan to medium-high heat and add a drizzle of olive oil. Add the mushrooms and string beans.

Add the minced garlic and mix.

Lower the heat to medium, cover and let cook for 5 minutes.

In the meantime, whisk the eggs in a bowl.

Move the vegetables to one side of the pan and pour the scrambled eggs into the other side. Let cook for 2 minutes, while breaking the eggs up with a spatula or wooden spoon.

Add the noodles and soy sauce. Mix to combine and cook for 2 more minutes on high heat.

Serve hot and enjoy! Optional: sprinkle with fresh cilantro
