White Bean, Bacon & Shrimp Salad

1/4 cup
Cannellini beans (cooked)
2 slices
Bacon
2 oz
Cooked shrimp
1/2 cup
Cherry tomatoes
1 pinch
Paprika
optional
1 tbsp
Basil (fresh)
1 tsp
Balsamic vinegar

- Step 1
Heat a pan over medium-high heat. Add the bacon. Cook for 2 min on each side, or until done to your liking. Set the bacon on a paper-towel lined plate to drain the grease. - Step 2
Reheat the same pan. Add the shrimp & paprika. Cook for 2 min, or until heated through. Then remove from heat. - Step 3
Rinse & drain the canned white beans. Pour them into a serving bowl. Wash the baby tomatoes. Slice them in half & add them to the bowl. Add the bacon & shrimp. - Step 4
Top with a drizzle of olive oil & a half drizzle of vinegar. Season with salt & pepper. Garnish with chopped basil (optional). Enjoy!
