This Greek-inspired summer salad is to die for!
Step 1
Cut the watermelon into chunks, removing any seeds.
Step 2
Remove the olive pits. Roughly chop the olives.
Step 3
Roughly chop the parsley leaves.
Step 4
Peel & finely slice the red onion.
Step 5
Add the watermelon, olives & onion to a salad bowl. Crumble the feta cheese over top.
Step 6
Garnish with parsley & oregano (optional). Season with salt & pepper. Add a final drizzle of oil. Enjoy!
