Preheat the oven the 350°F. Chop the ends off the eggplant and then cut into thin round slices.

Cut the ends off the zucchini and cut into thin round slices.

Cut the tomatoes into thin slices.
- Step 4
Remove the outer layers of the onion and then cut into thin round slices.
- Step 5
Grease a round oven-safe dish with butter or olive oil. Add grated garlic to the base of the dish.

Place the vegetables in an upright position by alternating in a circular pattern.
- Step 7
Drizzle with olive oil and sprinkle with thyme, salt & pepper. Bake at 350°F for 50 minutes.

Remove from oven and enjoy!
