Vegan Pistachio & Olive Pasta

Stovetop, Pot (small), Colander, Immersion blender


Pasta (farfalle or bow-tie)

Step 1

In a large pot of salted boiling water, cook the pasta according to package instructions.

Pistachios (roasted)

Step 2

Meanwhile, shell the pistachios (if needed).

Black olives (pitted)
Pistachios (roasted)
Basil (fresh)

Step 3

In an immersion blender bowl or food processor, add the pistachios, olives, garlic, 2/3 of the basil, salt, pepper & olive oil.

Step 4

Blend to make a pesto.

Pasta (farfalle or bow-tie)

Step 5

Once the pasta is cooked, drain & toss with the pesto mixture.

Basil (fresh)

Step 6

Serve garnished with remaining basil leaves. Mangia!
