Creamy Curry Udon Noodles with Mushrooms

Udon noodles

1 tsp
Curry powder

Egg

1 cup
White mushrooms (whole)

2 tbsp
Parmesan (grated)

1 clove
Garlic

1 tbsp
Heavy cream

Clean & slice the mushrooms. - Step 2
Heat a drizzle of olive oil in a frying pan over medium heat. Grate the garlic into the pan & add the mushrooms. Stir & brown for about 5 min. - Step 3
Add the curry powder & noodles with 3 tbsp of water per serving. Season with salt & pepper. Mix, cover & cook for 1 min. Then add the cream & grated parmesan. Mix, then continue cooking for an additional 2 min. - Step 4
Meanwhile, in another pan, heat a drizzle of olive oil & add the egg. Cook to your liking, for 2-3 min. Season with salt & pepper. - Step 5
Serve the noodles with the fried egg on top. Garnish with sesame seeds if you have. Enjoy!
