Cook the rice according to the package instructions. Set aside.
In a pan over medium heat, toast the cumin seeds for 1 min. Shake the pan to prevent the seeds from burning. Then add a drizzle of oil, curry, turmeric & sea salt to the pan. Cook, stirring for 1-2 min.
Lower the heat & add the cashews. Shake the pan & cook for 1 more min.
Squeeze the lemon juice over the mixture to deglaze the pan. Pour in the cooked rice. Season with salt & pepper. Stir all to combine. Cook 3-5 min to meld the flavors.
Remove from heat. Garnish with fresh cilantro leaves (optional). Enjoy!
