Turkey Breast with Gravy

3/8 sprig
Thyme (fresh)

Flour (all-purpose)

- Step 1
Preheat the oven to 375°F. Peel & quarter the shallots. - Step 2
Strip the thyme leaves. - Step 3
In a small bowl, combine thyme & 2/3 of softened butter. Add a generous pinch of salt & pepper. Mix it all together. - Step 4
In a baking dish, add shallots. Pat the turkey breast dry with a paper towel & lay it on top of the shallots. - Step 5
Spread the herb butter all over the turkey skin & under the skin. - Step 6
Pour the broth into the bottom of the baking dish. Season the turkey with another pinch of salt. Roast in the oven at 375°F for 1.5 hours or until the turkey is fully cooked (internal temperature of 165°F). - Step 7
Remove the baking dish from the oven & transfer the turkey breast to a plate. As the turkey rests for 10 min, transfer the roasted shallots to a small dish & the pan liquid to another bowl. - Step 8
Use a spoon to skim the fat from the top of the liquid & add it to a small saucepan over medium heat. Add in the remaining butter & allow it to melt. Then add in flour & whisk to combine until smooth. - Step 9
Slowly pour in the rest of the pan liquid & whisk. Season with salt & pepper. - Step 10
Slice the turkey against the grain. Serve with lots of warm gravy : - ) Enjoy!
