Chives (fresh)
Cream cheese

Step 1

In a bowl, mix together the cream cheese, drained tuna, chopped chives (optional), salt & pepper. Set aside.

In a separate bowl, whisk together the eggs, salt & pepper.

Heat a drizzle of oil in a pan over medium heat. Add the eggs. Let cook for 2-3 min, or until they firm up around the edges.

Step 4

Spoon the tuna mixture over the middle of the omelette. Let cook for 1-2 min.

Arugula

Step 5

Fold over the edges of the omelette. Arrange the arugula on a serving plate. Transfer the folded omelette to the bed of greens. Drizzle with olive oil. Season with salt & pepper. Enjoy!
