  • Step 1
    Cook the pasta according to package instructions.
  • Step 2
    To make the dressing, whisk the balsamic vinegar, extra virgin olive oil, salt & pepper in a large bowl.
  • Step 3
    Add the salad greens to the bowl & toss to combine.
  • Step 4
    Drain the tortellini & add to the salad bowl.
  • Step 5
    Shave cheese into thin strips or sprinkle shredded/grated parmesan over top.
  • Step 6
    Add the pine nuts & season with salt & pepper. Optional: Toast the pine nuts in a pan beforehand, for even more flavor!
