Ingredients for 1 pie
Preheat the oven to 400°F. Cut the tomatoes in half.
In a pan, melt the sugar and balsamic vinegar, and let bubble for one minute.
Add the tomatoes and cook on low heat for 5 minutes on each side. Season with salt & pepper.
Add a layer of parchment paper to a pie dish and add the tomatoes in one layer.
Top with the pie crust, folding the edges inward. Bake for 30 minutes. Remove from the oven when golden brown and let cool for 5 minutes.
Flip the tart by placing a large place on top of the pie dish. Holding together, flip in one swift move. Enjoy!
