Tomato Barley Soup

Ingredients for 1

Carrots (fresh)

Tomato paste

Yellow onion
1/3 cup
Pearl barley
1.5 cups
Veggie broth
1/4
Lime
1/2 tsp
Turmeric (ground)

1 tbsp
Parsley (fresh)
optional
2 tbsp
Coconut milk
optional
1 pinch
Red pepper flakes

- Step 1
Peel & mince the onion. - Step 2
Peel & dice the carrot. - Step 3
Heat a drizzle of oil in a large pot over medium heat. Add the onion. Cook, stirring for 1 min. - Step 4
Juice the lime into to the pot. Add the turmeric & carrots. Mix together. - Step 5
Add the barley & veggie stock. (Or use a bouillon cube with water!) Stir in the tomato paste. - Step 6
Season with salt & pepper. Add a pinch of chili flakes for a kick (optional)! Reduce the heat to low. Cover & simmer for 25-30 min, stirring occasionally. - Step 7
Serve the soup in bowls garnished with a splash of coconut milk & fresh parsley (optional). Enjoy!
