Step 1

Wash the tomatoes. Slice them into thin wedges.

Parsley (fresh)

Step 2

Shell the pistachios (if needed). Wash & roughly chop the parsley.

Step 3

In a small bowl, whisk together the vinegar, parsley, salt, pepper & a healthy drizzle of oil.

Pistachios (roasted)

Step 4

Arrange the tomatoes on a plate. Top with crumbled feta & pistachios. Drizzle with your dressing. Enjoy!
