Tortellini (Spinach & cheese)
1/2 cup
Cherry tomatoes
2 handfuls
Spring mix lettuce
1 oz
Mozzarella (fresh)

1 tbsp
Pine nuts

Cut the tomatoes in half. - Step 2
Meanwhile, in a pot of boiling salted water, cook the tortellini according to the package directions. Drain & let the tortellini cool completely. - Step 3
In a dish, add the spring mix, tortellini, cherry tomatoes, mozzarella torn into pieces & pine nuts (optional). Season with a drizzle of olive oil, salt & pepper. Add a drizzle of your favorite vinegar if desired. Enjoy!
