Saucy Peanut Tofu Bowl

Ingredients for 1

Tofu (firm)
1/4 oz
Broccoli (fresh)
1/3 cup
White rice (long grain)
1 tbsp
Peanut butter
2 tbsp
Soy sauce
1/2 clove
Garlic
2 tbsp
Flour (all-purpose)

Cook the rice according to package instructions. - Step 2
Meanwhile, wash & cut the broccoli into florets. - Step 3
In a pot of salted, boiling water, cook the broccoli for 5-6 min, until it's tender. Drain & set aside. - Step 4
Meanwhile, drain the tofu & press it dry. Cut it into small cubes. - Step 5
Fill a wide bowl with flour. Toss in the tofu & coat evenly. - Step 6
Heat a drizzle of neutral oil on a pan over medium-high heat. Shake off the excess flour & add in the tofu. Stir & sear the tofu on all sides for 5-7 min. - Step 7
Meanwhile, in a small bowl, combine peanut butter, soy sauce & grated garlic. Freshly grated ginger is an amazing addition if you have some! Add a splash of water if necessary to thin the sauce. - Step 8
Once the tofu is nicely toasted, lower the heat. Stir in the peanut sauce. Mix & cook for 1-2 min. - Step 9
Serve the tofu with fluffy rice & broccoli. Add crushed peanuts & fresh cilantro if you have. Enjoy!
