Everyday grilled cheese just got a fab French makeover!

Step 1
Preheat the oven to 450°F. Wash the leek & cut off the ends, keeping only the white & light green section. Cut the leek in half lengthwise, then into thin slices.
Step 2
Melt a dab of butter in a pan over medium-high heat. Add the leek. Season with salt & pepper. Cook, stirring for 2 min.
Step 3
Reduce the heat to low & cook for 5-7 min. Then remove from heat.
Step 4
Shred the Gruyère cheese. Set aside half of it for later. In a bowl, mix together the rest of the Gruyère cheese, cooked leeks, crème fraîche, parmesan, salt & pepper.
Step 5
Butter one side of each slice of bread.
Step 6
Butter a baking pan.
Step 7
Place half the bread slices in the baking pan, butter-side up. Smear most of the leek-cheese mixture over the bread, reserving the rest for the next step.
Step 8
Top each sandwich with the other slice of bread, butter-side down. Arrange the rest of the leek-cheese mixture & the reserved shredded cheese over top the sandwiches.
Step 9
Bake for 10 min at 450°F, or until golden & melty. Serve with a salad drizzled with your favorite dressing. Enjoy!
