Parm Crusted Air Fryer Tilapia

Tilapia (fresh)
1 cup
Brown rice (long grain, cooked)
1 handful
Green beans (fresh)
2 tbsp
Parmesan (grated)
2 tbsp
Bread crumbs (panko)

1 sprig
Parsley (fresh)
1/2 clove
Garlic

- Step 1
Wash & finely chop the parsley. - Step 2
In a bowl, add the panko bread crumbs, parmesan cheese & chopped parsley. Grate the garlic into the bowl, season with salt & pepper. Add a drizzle of olive oil. Mix everything together. - Step 3
Line the basket of an air fryer with a piece of parchment paper. Place the tilapia into the air fryer & top with the breadcrumb mixture. Spray the breadcrumb topping with cooking spray & place in the air fryer. Cook at 350ºF for 12-15 min or until the fish is cooked & the topping is golden brown. - Step 4
Meanwhile, in a pot of boiling, salted water, add the green beans & cook for 4-5 min or until the green beans are tender. Drain & set aside. - Step 5
Remove the tilapia from the air fryer. Heat the brown rice according to package directions. - Step 6
Serve the parm crusted tilapia with the brown rice & green beans. Season to taste & enjoy!
