Thai Beef & Noodle Salad

Rice noodles

Step 1

Cook or soak the rice noodles according to the package instructions.

Cucumber

Step 2

Meanwhile, thinly slice the cucumber & set aside.

Broccoli (fresh)

Step 3

Wash the broccoli & cut into florets.

Cook the broccoli in a pot of salted boiling water for 5 min, or until crisp-tender.

Rice noodles

Step 5

Drain the rice noodles & rinse them under cold water.

Drain the broccoli & rinse under cold water.

Beef (flank steak)

Step 7

Heat a drizzle of oil in a pan over medium-high heat. Add the steak & cook for 2 min.

Soy sauce
Balsamic vinegar
Sugar (granulated)

Step 8

Flip the steak. Add the soy sauce, balsamic vinegar & sugar to the pan. Cook for at least 1 more min.

Step 9

When the beef is done, remove it from the pan. Reduce the heat & let the sauce continue to reduce.

Beef (flank steak)

Step 10

Slice the beef into strips.

Mint (fresh)
Sesame seeds

Step 11

Add the noodles, cucumber, broccoli, torn mint leaves & sesame seeds (optional) to a mixing bowl. Add the sauce, season with pepper & toss to combine.

Step 12

Serve the noodle salad on a plate with the sliced beef over top. Garnish with few more mint leaves & sesame seeds (optional). Yum!
