Tasty Taco Beef Bowl

Cherry tomatoes

Romaine lettuce
1/4 cup
Fire roasted corn

Avocado lime dressing
1/4 lb
Ground beef
1 tsp
Taco seasoning

- Step 1
Preheat the oven to 350°F. On a sheet tray lined with parchment paper, add the tortilla bowls. Spritz with baking spray & toast in the oven for 10 min, until golden brown. - Step 2
Heat a drizzle of oil in a pan over medium-high heat. Add the ground beef. Stir & cook, breaking up the meat with the spatula, for about 2-3 min. Once the meat is no longer pink, lower the heat & stir in the taco seasoning. Mix until evenly coated, then remove from the heat. - Step 3
Rinse & dry the lettuce, then roughly chop. - Step 4
Wash & dice the tomatoes. - Step 5
In a mixing bowl, combine the lettuce, tomatoes & fire roasted corn. Toss in the avocado lime dressing. - Step 6
Remove the golden tortilla bowls from the oven. Distribute the salad mix into each bowl. Top with spoonfuls of ground beef & shredded cheese. A more dressing if you wish! Serve & enjoy!
