Chipotle peppers in adobo sauce

Corn tortilla (soft taco)
1/4 cup
Pineapple (canned)
2 tbsp
Queso fresco

- Step 1
Heat a drizzle of oil in a pan over medium-high heat. Add ground pork, salt & pepper. Cook for 3-4 min, breaking it into small pieces with the spatula. - Step 2
Mix in the chipotle peppers in adobo sauce, breaking up the peppers as they cook. - Step 3
Add 1-2 tbsp of the canned pineapple juice (per serving). Mix it all together until everything is well-combined & cooked through. - Step 4
Build your tacos! On warm tortillas, add cooked pork, pineapple chunks & crumbled queso fresco. Garnish with cilantro & a squeeze of lime (both optional)! Enjoy!
