Prepare the quinoa according to package directions. - Step 2
Meanwhile, wash & cut the tomato into cubes. - Step 3
Wash & cut the cucumber into cubes. - Step 4
Peel & chop the red onion. - Step 5
Wash & chop slice the mint. - Step 6
In a bowl, add the quinoa, tomato, cucumber, red onion & mint. - Step 7
Add the lemon juice & a generous drizzle of olive oil. Season with salt & pepper. Stir everything together. Crumble the feta on top & mix again. - Step 8
Serve the quinoa tabbouleh with a sprig of mint & a thin slice of lemon. Enjoy!
