Stir-Fried Noodles with Veggies & Egg

Stir fry noodles (egg)
4 oz
White mushrooms (whole)
1 handful
Green beans (fresh)
1 tbsp
Soy sauce
1/4 clove
Garlic

- Step 1
In a pot of boiling water, cook the noodles according to package instructions. Once cooked through, drain the noodles & rinse them with cold water to prevent sticking. Set them aside. - Step 2
Meanwhile, clean & thinly slice the mushrooms. - Step 3
Heat a drizzle of olive oil in a nonstick frying pan over medium heat. Add the mushrooms & green beans. Grate in the garlic & season with salt. Stir to combine, then add a drizzle of water to the pan (about 2 tbsp per serving). Cover & cook for 10-12 min, until the veggies are tender. - Step 4
Meanwhile, crack the eggs into a bowl. Season with salt & whisk well. - Step 5
Move the veggies to one side of the pan. Add a drizzle of olive oil & pour the eggs onto the empty side. Let the eggs cook undisturbed for 1 min before breaking them up with a spatula. Combine the scrambled eggs with the steamed veggies. - Step 6
Add the cooked noodles & soy sauce to the frying pan. Mix & cook for another 1-2 min until everything is well-combined. Finish with a drizzle of sesame oil (about 1/2 tsp per serving), if you have any. - Step 7
Serve the stir-fried noodles in a bowl & garnish with fresh cilantro and/or scallions, if you have any. Enjoy!
