Steak with Creamy Mushrooms & Polenta

Flank steak
1/3 cup
Polenta
4 oz
White mushrooms (whole)
1 tbsp
Crème fraîche
1 tsp
Whole grain mustard
1/4
Yellow onion

- Step 1
Peel & thinly slice the onions. - Step 2
Clean & thinly slice the mushrooms. - Step 3
Heat a drizzle of olive oil in a pan over medium heat. Add the onions, mushrooms, salt & pepper. Stir & cook 4-5 min until slightly softened. - Step 4
Meanwhile, boil a small pot of water (1.5 cup per person) with a pinch of salt in a saucepan. Reduce the heat to low & whisk in the polenta. Stir & cook for 2 to 3 min, until you obtain a thick & creamy texture. (Add more water to thin out the consistency if you wish!) - Step 5
Once the polenta has thickened, add a small piece of butter & a pinch of black pepper. Mix well & keep warm. - Step 6
Heat a second pan over high heat. Pat the steak dry & add a drizzle of olive oil to the pan. Add the steak. Season well with salt & pepper. Sear it undisturbed for 3-4 min on each side, over high heat, for medium-rare. - Step 7
Once the mushrooms are cooked, stir in the cream & mustard. Mix & simmer for an additional 1 - 2 min, so the sauce thickens. - Step 8
On a plate, serve the polenta with the steak & creamy mushrooms on top. Re-season to taste & add a few sprigs of parsley, if you have any. Serve & enjoy!
