Quinoa

Flank steak
1 handful
Arugula
2 tsp
Whole grain mustard
1/4
Lemon

Tzatziki

Cook the quinoa according to package instructions. Fluff the cooked quinoa with a fork. - Step 2
Meanwhile, prep your dressing! In a small bowl, combine whole-grain mustard, lemon juice & 1.5 tbsp of olive oil per serving. Season with salt & pepper. Mix it all together. - Step 3
Heat a drizzle of oil in a pan over medium-high heat. Pat the steak dry with a paper towel. Season all over with salt & pepper. Sear the steak for 2-3 min on each side or until done to your liking. - Step 4
Serve the steak over a bed of fluffy quinoa with arugula & a dollop of tzatziki. - Step 5
Top with the mustard vinaigrette. Enjoy!
