  • Step 1
    Roughly chop the sun-dried tomatoes.
  • Step 2
    Cook the ravioli according to the package instructions.
  • Step 3
    Heat a drizzle of olive oil in a pan over medium heat. Add the minced or grated garlic. Sauté for 1 min.
  • Step 4
    Stir in the sun-dried tomatoes.
  • Step 5
    Add the mascarpone & stir. Add a splash of water. Season with salt & pepper. Cook, stirring for 1-2 min. Turn off the heat & add the spinach.
  • Step 6
    Add the drained ravioli to the pan. Mix it all together.
  • Step 7
    Serve garnished with grated parmesan. Season with salt & pepper. Add a final drizzle of olive oil. Enjoy!
