  • Step 1
    Preheat the oven to 400°F. Defrost the spinach according to the package instructions, drain, and set aside.
  • Step 2
    In a large bowl, whisk the eggs with the sour cream, salt & pepper. Add the spinach and half of the crumbled goat cheese and gently mix.
  • Step 3
    Roll out the pie crust into a baking dish (cut off any extra dough that hangs over the side or leave it for a more rustic look.) Poke the bottom of the pie crust with a fork and then pour in the egg mixture.
  • Step 4
    Cut the rest of the goat cheese into slices and place them on the top of the egg mixture. Bake the quiche at 400°F for 40 minutes. Serve alone or with a salad.Enjoy!
