Yellow onion

Step 1

Peel & mince the onion.

Heat a drizzle of olive oil in a pan over medium-high heat. Add the onion. Cook, stirring for 1-2 min.

Andouille sausage (smoked)

Step 3

Add the sausages. Pierce them a few times with a fork. Brown the sausages for 2 min on each side.

Tomato sauce
Harissa (paste)

Step 4

Add the canned tomatoes & harissa (or your favorite hot sauce!). Season with salt & pepper. Add a splash of water. & stir. Reduce the heat to low. Cover & simmer for 3-5 min.

Couscous

Step 5

Prepare the couscous according to the package instructions. You can crumble in a bouillon cube for more flavor!

Cilantro (fresh)

Step 6

Fluff the couscous. Spoon it onto serving plates. Top with smoked sausages & spicy tomato sauce. Garnish with fresh cilantro leaves & a drizzle of olive oil (optional). Enjoy!
