Separate the egg whites from the yolks in two large mixing bowls. - Step 2
In the bowl with the egg yolks, add the sugar. Beat with an electric mixer until pale yellow & fluffy. - Step 3
Add the mascarpone & beat until well combined. - Step 4
In the bowl with the egg whites, beat with an electric mixer until stiff, about 3-4 min. - Step 5
Gently fold the whipped egg whites into the mascarpone mixture. - Step 6
Prepare the coffee (about 1 cup for 8 servings) & pour it into a shallow dish to cool. Dip the speculoos cookies into the coffee (reserve about 5 cookies for garnishing). Place a first layer of cookies in the bottom of a deep baking dish. - Step 7
Spread half of the mascarpone mixture over the cookies. Add a second layer of cookies & the remaining mascarpone mixture. Cover the tiramisu & chill in the refrigerator for least 6 hrs, ideally overnight. - Step 8
Remove the tiramisu just before serving. Chop the remaining cookies & garnish the top of the tiramisu. Serve & enjoy!
