Step 1
Roughly chop the pancetta. Heat a drizzle of oil in a pan over medium heat. Add the pancetta. Cook, stirring for 5 min.
Step 2
Crack & separate the eggs. Placing only the yolks into a small bowl.
Step 3
Cook the pasta according to the package instructions. Reserving a bit of the pasta cooking liquid.
Step 4
In a small bowl, whisk together the egg yolks, salt, pepper, parmesan & a few splashes of the pasta cooking liquid.
Step 5
Add the drained pasta to the pan with the pancetta. Then add the yolk-parmesan sauce. Toss it all together, adding more pasta water as needed to thin out the sauce!
Step 6
Season with salt & pepper. Add a drizzle of olive oil & a sprinkle of parmesan. Mangia!
