Tortellini (Spinach & cheese)
2 oz
Italian pork sausage (ground)
1/2 cup
Tomato sauce
1/8 cup
Heavy cream
1 handful
Spinach (fresh)
1/4
Yellow onion
3/4 cup
Chicken broth
optional
1/4 tsp
Garlic powder
optional
1 tbsp
Parmesan (grated)

- Step 1
Peel & mince the onion. - Step 2
If using sausage links, roughly chop them. - Step 3
Heat a drizzle of oil in a pot over medium-high heat. Add the onions & a pinch of salt. Cook, stirring for 2 min. - Step 4
Add the sausage meat. Cook, stirring for 2 min. - Step 5
Add the tomato & stock to the pot. Stir & bring it to a boil. Add the tortellini. - Step 6
Season with salt & pepper. Add a pinch of garlic powder (optional). Cover & cook according to the tortellini package instructions. - Step 7
When the tortellini is al dente, add the cream & spinach. Stir to combine. - Step 8
Serve in bowls garnished with parmesan cheese (optional). Enjoy!
