  • Step 1
    Peel & mince the onion.
  • Step 2
    If using sausage links, roughly chop them.
  • Step 3
    Heat a drizzle of oil in a pot over medium-high heat. Add the onions & a pinch of salt. Cook, stirring for 2 min.
  • Step 4
    Add the sausage meat. Cook, stirring for 2 min.
  • Step 5
    Add the tomato & stock to the pot. Stir & bring it to a boil. Add the tortellini.
  • Step 6
    Season with salt & pepper. Add a pinch of garlic powder (optional). Cover & cook according to the tortellini package instructions.
  • Step 7
    When the tortellini is al dente, add the cream & spinach. Stir to combine.
  • Step 8
    Serve in bowls garnished with parmesan cheese (optional). Enjoy!
