Smoky Grilled Pork Chop with Peach Relish

Pork chops (bone-in)
1 cup
White rice (long grain, cooked)

Peach (fresh)

Red onion
1/2 tbsp
Apple cider vinegar
1/2 tsp
Chipotle seasoning
1/2 tbsp
Brown sugar (light)
1/2 tbsp
Smoky spice rub

- Step 1
Wash & cut the peach in half. Slice the peach into wedges around the pit. Remove each wedge & cut into small pieces. - Step 2
Peel & finely chop the red onion - Step 3
Heat a drizzle of olive oil in a small saucepan over medium-low heat. Add the red onion, chopped peach, brown sugar, a pinch of salt & the apple cider vinegar. Stir & simmer for 5-8 min, stirring occasionally until the peaches are soft. - Step 4
Season the pork chop on all sides with the smoky spice rub & chipotle seasoning. - Step 5
Heat a drizzle of oil on a grill pan or skillet on medium-high heat. For a gas or charcoal grill, preheat it to 425ºF. Add the pork chop & sear, undisturbed for 5-6 min. Flip, then cook for another 5-6 min or until fully cooked. Timing depends on the thickness of the pork chop! - Step 6
Stir the peach relish & remove it from the heat. - Step 7
Heat the rice according to package directions. - Step 8
Serve the rice & pork chop on a plate. Add the peach relish & top with fresh herbs if you have any!
