Trim the ends of the leek. Then slice the white & light green parts into thin rings.
Place the leeks in a fine-mesh sieve. Rinse thoroughly under running water. Drain well.
Melt a pat of butter in a pan over medium-high heat. Add the leeks & cook for 2 min, stirring regularly.
Reduce the heat to medium-low, cover & simmer for 5 min.
In a pot of salted boiling water, cook the pasta according to the package directions.
After 5 min, add the sour cream to the leeks. Season with salt & pepper. Cook, stirring for 5 more min.
Once the pasta is cooked, drain it, then add it to the pan with the leeks. Season with salt & pepper. Mix to combine.
Add the smoked salmon, tearing it into small pieces.
