Zucchini

Step 1

Wash & dice the zucchini.

Red wine vinegar
Oregano (dried)

Step 2

In a medium bowl, whisk together the vinegar, 2 tbsp of olive oil (per person), oregano, salt & pepper.

Add the zucchini. Mix to coat. Set aside.

Beef (steak)

Step 4

Add a drizzle of oil to a pan over high heat. Add the steak to the pan & sear for 2 min. Turn it over & cook 2 more min, or until done to your liking.

Transfer the cooked steak to a cutting board. Let it rest for 5 min.

Slice the steak.

Arrange the steak on a serving plate. Top with the zucchini, vinaigrette, a sprinkle of oregano, salt & pepper. Enjoy!
