Ingredients for 1 pie
Preheat the oven to 400°F. Place the puff pastry on a baking sheet and spread a layer of pesto, leaving about a 1 inch border.
Bake at 400°F for 5 minutes to pre-bake the crust.
After washing the tomatoes, cut them in half (if using cherry tomatoes) or in slices (if using larger tomatoes).
After 5 minutes, remove the dough from the oven and top with the tomatoes, salt, pepper and a drizzle of olive oil. Bake for an additional 20 minutes.
When the tart is golden brown, remove it from the oven and add the crumbed goat cheese. Enjoy!
