Cook or soak the barley according to package instructions.
Bring a pot of salted water to a boil. Trim the green beans & add to the pot. Cook for 1 minutes. Add the peas. Cook for another 2-3 minutes. Drain & set aside.
In a pan, heat a drizzle of olive oil over medium heat. Add minced or crushed garlic. Then add the shrimp. Cook, stirring, for 2 minutes.
Add the zest & juice from the lemon to the shrimp. Add the barley, peas & green beans to the pan. Stir together. Season with salt & pepper. Serve & enjoy!
