  • Step 1
    Heat a drizzle of olive oil in a pan over medium heat. Add the cooked shrimp & garlic (crushed or minced).
  • Step 2
    Cook for 4 minutes, stirring frequently. Remove from heat.
  • Step 3
    Cut avocado into thin slices.
  • Step 4
    Cut off the ends of the grapefruit. Then slice off the peel and pith. Remove each section of pulp with a knife. If necessary, remove the seeds. Set wedges aside.
  • Step 5
    To make the dressing, squeeze juice from remaining grapefruit into a bowl. Add 1 tbsp of extra-virgin olive oil, salt & pepper. Mix well.
  • Step 6
    Toss greens with the dressing. Add shrimp. Then add avocado & grapefruit slices. A few fresh cilantro leaves would be lovely (optional). Enjoy!
