  • Step 1
    Cook the rice according to the package instructions. Once cooked, set aside to cool.
  • Step 2
    Cut the avocado into cubes. Finely mince the onion.
  • Step 3
    Add the rice to a bowl. Top with baby spinach, avocado, red onion & cooked shrimp.
  • Step 4
    Add a drizzle of olive oil & squeeze of lime juice. Season with salt & pepper. Garnish with fresh chives (optional). Enjoy!
