Sesame Chicken with Green Beans & Rice

Chicken thighs (boneless, skinless)

Corn starch
1 tbsp
Soy sauce
1 tsp
Toasted sesame oil
1 tbsp
Sweet chili sauce
1/2 cup
White rice (long grain, cooked)
1 handful
Green beans (fresh)

- Step 1
Bring a pot of salted water to the boil. Meanwhile, slice the chicken into 1-inch pieces. Season with salt & pepper & sprinkle all over with corn starch. - Step 2
In a small bowl, add the soy sauce, sesame oil & sweet chili sauce. Whisk to combine. - Step 3
Add the green beans to the boiling water & cook for about 3-4 min, or until bright green & tender. Drain & set aside. - Step 4
Heat a drizzle of olive oil in a skillet over medium-high heat. When hot, add the chicken & let cook for about 4 min per side until the chicken is golden brown & cooked through. - Step 5
When the chicken is cooked, add the sauce. Toss the chicken to coat in the sauce. Let the sauce simmer & thicken for a few min, then turn off the heat. - Step 6
Heat the rice according to package instructions. Plate the rice, chicken & green beans. Garnish with sliced scallions (optional). Serve & enjoy!
