Seared Salmon with Quinoa & Zucchini

Salmon (fresh)

1/3 cup
Quinoa

1/2
Zucchini

1/4 clove
Garlic

1 handful
Arugula

Cook the quinoa according to package instructions. - Step 2
Wash & cut the zucchini into half-moon slices. - Step 3
Heat a drizzle of oil in a pan over medium heat. Add grated or minced garlic, zucchini, salt & pepper. Sauté 4-5 min until the zucchini begins to brown around the edges. - Step 4
Push the veggies to the sides of the pan to create a space in the middle. Pat the salmon dry with a paper towel & season with salt & pepper. Arrange the salmon skin side down in the pan. Sear for 4 min. - Step 5
Flip the salmon over and cook for 3 min on the other side. Remove from the heat. - Step 6
Serve salmon with a side of fluffy quinoa, zucchini & arugula. - Step 7
Season with salt, pepper & add a drizzle of olive oil. Add a sprinkle of freshly chopped herbs if you have (optional). Enjoy!
