Cook the noodles according to the instructions on the package.
In a large skillet or wok on high heat, add a drizzle of olive oil and the string beans.
Grate or mince the garlic and ginger. Add it to the pan and cook for 4 minutes.
Using a vegetable peeler, make long strands of the carrot and add them to the pan along with the shrimp and soy sauce.
