Stovetop, Pot (small), Colander, Frying pan, Immersion blender
Step 1
Add the peas to a pot of salted boiling water. Cook for 3 min. Drain & set aside.
Step 2
Peel & mince the shallot. Heat a drizzle of oil in a pan over medium heat. Add the shallot. Cook, stirring for 2 min.
Step 3
Pour the vinegar into the pan & stir. Add most of the butter. Whisk until the melted butter & vinegar are combined. Season with salt & pepper. Cover & turn off the heat.
Step 4
Add the peas & rest of the butter to a food processor or blender. Purée until smooth. Add a splash of water if too thick. Be sure to season with salt & pepper!
Step 5
Pat the cod bone dry with a paper towel. Heat a drizzle of oil in a pan over medium heat. Cook the cod for 2-3 min on each side, or until cooked through.
Step 6
Spoon the pea purée onto a serving plate. Top with pieces of cod. Pour the vinegar-butter sauce over all. Enjoy!
