Stovetop, Pot (small), Colander, Frying pan, Immersion blender

Peas (frozen)

Step 1

In a small pot of boiling water, cook the peas for 5 minutes. When done, drain & set aside.

Shallot
Butter (unsalted)

Step 2

Mince the shallot. In a pan over medium heat, melt a pat of butter. Add the shallots & sauté for 2 minutes.

Red wine vinegar
Butter (unsalted)

Step 3

Add the vinegar & cook for 1-2 minutes. Add most of the butter in 1 tbsp parts. Whisking to blend with the wine vinegar as you go. When combined, cover & turn off or lower heat.

Step 4

Add remaining butter to the peas & puree with an immersion blender or food processor. If too thick, add a bit of water. Season with salt & pepper.

Cod (fresh)

Step 5

Pat the cod bone dry with a paper towel. Heat a drizzle of oil in a pan over medium heat. Cook the cod for about 2 minutes on each side, or until done.

Step 6

Spoon the pea puree onto a plate. Serve the cod over top. Pour the sauce over all & enjoy!
